Warmer weather is finally here, and a cool afternoon treat is just what you need! These pineapple protein popsicles will hit the spot and leave you feeling quilt free.
You can also make this recipe and drink as a protein smoothie (has a dole whip kind of flavor!) You'll need just a few ingredients, some popsicle molds and of course a great blender - The Nutri Ninja works wonders!
Ingredients-
1/2 to whole cup Oikos Triple Zero Vanilla Greek Yogurt (plain totally works too)
1/2 to full serving vanilla protein powder (Premier Protein Vanilla is what I used here)
1/2 cup or more pineapple chunks (frozen works best if you're going the smoothie route or you can add some crushed ice) Canned or fresh works if you're doing popsicles.
Small amount of the pineapple juice (optional)
1/4 to 1/2 cup unsweetened almond milk
You'll notice that I didn't give super precise measurements or amounts. That's because you can't mess it up! It will depend on how many pops you want to make. If you have extra mixture that means you get to have a vanilla pineapple protein smoothie while you're waiting for your popsicles to freeze :)
Steps-
Add all ingredients into your blender or Ninja-
Pulse together until they are blended well
Before pouring mixture into your molds, place a few chunks of pineapple at the bottom of each of the molds. (THIS IS THE SECRET TO A GREAT TASTING PINEAPPLE POP! See photo 2 below)
Poor carefully into your popsicle molds.
Set in freezer.
When they are frozen and ready to eat, run them under warm running water for a minute or so and they will pop right out.
