Football season is in full swing. Why is it that when a football game is on, it automatically makes me crave certain foods? Anyone else?! Isn’t it funny how much we correlate foods and flavors with certain events? Sadly, most of the time, the food associated with events are usually loaded with bad fats, sodium, and things that aren’t very good for us. It doesn’t have to be that way though. What if I told you that you can health up all the things, without compromising flavor? We can start with everyone’s favorite appetizer- buffalo chicken dip.
This recipe won’t be loaded with cream cheese or ranch dressing but will still pack a punch with that great buffalo flavor. I use Primal Kitchen Buffalo Sauce for this. You could sub just plain hot sauce, but the primal kitchen sauce does give it a bit of the creaminess that it needs. I also used my cute little 8-inch ceramic brie dish to bake it, but you could use any small baking dish… and could also easily double if you’re taking to an event. Ingredients-
2- 12.5 oz. cans shredded chicken (or sub about 4 breasts- cooked and shredded)
1/4 cup Primal Kitchen Buffalo Sauce
1 tbsp. Ranch dressing (Cesar dressing works too!)
1/2 cup plain Greek yogurt
1/4 cup shredded cheese (I prefer Colby Jack)
Small amount Frank's hot sauce
Directions-
Preheat oven to 350 degrees. Drain both cans of your chicken well, and then add all ingredients (except shredded cheese and Franks hot sauce) into a medium mixing bowl. Mix well. Take a small taste and then add desired amount of hot sauce. About 5 or 6 good shakes works well for us. Pour buffalo chicken mixture into your small baking dish.
*Last time I made this, I left out just a bit and made myself a buffalo chicken quesadilla with it and it was amazing. (Highly recommend!)
After your chicken mixture is in your baking dish, top with your shredded cheese and it is ready to bake. Bake for about 10 minutes and then right at the end, add about 2 minutes of broiling time. This will give you that toasty, bubbly cheese on the top (and that's the best!)
I enjoy eating this with my favorite plantain chips, nut thins or carrot sticks. And, yes, sometimes even just with a spoon! Now add this to your weekend meal plan and enjoy some football with friends!
